  • ½ tsp ground black pepper
  • 1 lemon sliced

For the Barley Risotto:

  • 1 cup barley uncooked
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • ¼ cup grated Parmesan cheese
  • 1 tsp fresh thyme leaves

For the Seasonal Greens:

  • 4 cups mixed seasonal greens e.g., kale, spinach, arugula
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp lemon juice

Instructions

Step 1: Cook the Barley Risotto

  • Heat olive oil in a medium saucepan over medium heat. Sauté the onion and garlic until fragrant.

Step 3: Prepare the Greens

  • Toss the seasonal greens with olive oil, salt, and lemon juice in a mixing bowl. Sauté lightly in a skillet for 2-3 minutes if desired, or serve raw for a fresh contrast.

Step 4: Assemble and Serve
