Ingredients

For the Chowder:

  • 2 tbsp unsalted butter
  • 1 large leek white and light green parts only, sliced
  • 2 medium potatoes peeled and diced
  • 2 parsnips peeled and diced
  • 4 cups vegetable or fish stock
  • 1 cup heavy cream
  • 8 oz smoked fish flaked, such as haddock or salmon
  • 1 tsp fresh thyme chopped
  • 1 bay leaf
  • Salt and pepper to taste

For Garnish:

  • Fresh thyme sprigs
  • Cracked black pepper

Instructions

Step 1: Prepare the Base

  • In a large pot, melt the butter over medium heat. Add the sliced leek and cook for 5 minutes until softened and fragrant.

Step 2: Build the Flavor

  • Add the diced potatoes and parsnips to the pot, stirring to coat them in the butter. Cook for another 5 minutes.
