  • 1 Zester or microplane
  • 1 Serving bowl

Ingredients

  • 1 lb spring carrots baby carrots with tops trimmed, or sliced large carrots
  • 2 tbsp honey
  • 1 tbsp unsalted butter
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh mint finely chopped
  • ¼ tsp salt
  • Optional: cracked black pepper to taste
  • Optional: pinch of chili flakes for heat

Instructions

Step 1: Cook the Carrots

  • Place carrots in a saucepan and cover with lightly salted water.
  • Bring to a boil, then reduce heat and simmer for 8–10 minutes until just tender.
  • Drain and set aside.

Step 2: Glaze and Season

  • In the same saucepan, melt butter over medium heat.
