Equipment

Ingredients

  • 4-5 lbs bone-in pork shoulder
  • 1 ½ tbsp juniper berries crushed
  • 1 medium onion roughly chopped
  • 4 cloves garlic smashed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tbsp olive oil
  • 1 cup dry white wine
  • 2 cups chicken or vegetable broth
  • 1 tbsp balsamic vinegar
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

Prepare the Pork:

  • Preheat oven to 300°F (150°C).
  • Season the pork shoulder with salt and pepper. Use a spoon to crush the juniper berries and sprinkle them evenly over the pork, pressing gently to coat.

Sear the Pork:
