Ingredients

For the Tart Shell:

  • 1 ¼ cups all-purpose flour
  • ½ cup unsalted butter cold, diced
  • ¼ cup powdered sugar
  • 1 egg yolk
  • 1 tbsp cold water as needed

For the Almond Cream:

  • ½ cup unsalted butter softened
  • ½ cup sugar
  • 1 cup almond flour
  • 2 eggs
  • 1 tsp vanilla extract
  • ¼ tsp ground cinnamon

For the Poached Pears:

  • 3 firm pears peeled, halved, and cored
  • 3 cups water
  • ½ cup honey
  • 1 stick cinnamon
  • 1 pod star anise
  • ½ tsp ground nutmeg

Instructions

Step 1: Make the Tart Shell

  • In a mixing bowl, combine flour, butter, and powdered sugar. Rub the butter into the flour until the mixture resembles breadcrumbs.
  • Add the egg yolk and cold water (if needed) to form a dough. Wrap in plastic wrap and chill for 20 minutes.
