  • 1 Baking sheet For roasting the squash
  • 1 Mixing bowl For preparing the filling
  • 1 Muffin tin or tartlet molds For baking the tartlets
  • Parchment paper For lining the baking sheet

Ingredients

For the Tartlet Shells:

  • 1 package pre-made mini tart shells or puff pastry thawed if frozen

For the Filling:

  • 1 ½ cups roasted winter squash butternut or acorn squash recommended – mashed
  • 4 oz goat cheese softened
  • 2 tbsp heavy cream
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp fresh thyme leaves or ½ tsp dried
  • ½ tsp salt
  • ¼ tsp black pepper

For Garnish:

  • 1 tbsp honey optional
  • A few thyme sprigs or toasted pecans

Instructions

Roast the Squash:

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Cut the squash into halves, remove the seeds, and roast cut-side down on the prepared baking sheet for 25-30 minutes, or until tender.
