  • 1 Small saucepan For preparing the glaze
  • 1 Basting brush For applying the glaze
  • Aluminum foil For tenting the ham during roasting

Ingredients

For the Ham:

  • 1 bone-in ham (8-10 lbs)
  • 1 tsp ground cloves ground cloves

For the Glaze:

  • ½ cup honey
  • ½ cup orange juice (freshly squeezed)
  • ¼ cup brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Zest of 1 orange

Instructions

Prepare the Ham:

  • Preheat oven to 325°F (165°C).
  • Place the ham in a roasting pan, cut side down. Score the surface of the ham in a diamond pattern and stud each diamond with a whole clove, if desired.

Prepare the Glaze:

  • In a small saucepan, combine honey, orange juice, brown sugar, Dijon mustard, cinnamon, nutmeg, and orange zest.
  • Heat over medium-low, stirring until the sugar dissolves and the mixture is smooth. Remove from heat and set aside.

Roast the Ham:

  • Cover the ham loosely with aluminum foil and bake for 1 ½ hours.
  • Remove the foil and begin basting the ham with the glaze every 15 minutes during the last 30-45 minutes of cooking.

Finish the Ham:

  • Increase oven temperature to 400°F (200°C) during the final 10 minutes of cooking to caramelize the glaze.
