Equipment

  • 1 Large mixing bowl
  • 1 Wooden spoon
  • 1 Clean towel
  • 1 Loaf pan or baking sheet
  • 1 Pastry brush

Ingredients

  • 2 ¼ tsp active dry yeast 1 packet
  • 1 cup warm water about 110°F / 43°C
  • 2 tbsp honey Preferably local and raw for stronger connection to land
  • 2 tbsp melted butter
  • 1 egg room temperature
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • ½ cup cornmeal
  • 1 tsp salt
  • 1 tsp dried thyme or 2 tsp fresh
  • ½ tsp dried rosemary or 1 tsp fresh
  • 1 tbsp extra melted butter or 1 beaten egg

Instructions

Step 1: Activate the Yeast

  • In the large mixing bowl, combine warm water and honey. Stir gently until dissolved.
  • Sprinkle the yeast across the surface and let sit for 5–10 minutes, or until foamy.

Step 2: Mix the Dough

  • Add in the melted butter, egg, salt, herbs, and cornmeal. Stir until blended.
  • Begin adding the flours a little at a time, stirring until the dough forms.
  • Turn the dough onto a lightly floured surface and knead for 8–10 minutes, focusing on your intention of abundance and gratitude.

Step 3: First Rise

  • Grease the mixing bowl lightly. Place the dough inside and cover with a clean towel.
  • Let rise in a warm space for about 1 hour, or until doubled in size.

Step 4: Shape and Second Rise

  • Punch down the dough gently, then shape into a round or log. Place it into a greased loaf pan or directly on a baking sheet.
